80% Roussanne 20% Viognier
Integrated nose of apples and yellow fruits with pronounced whiffs of chamomile are followed and supported by expressive flavours of pear and Jonagold apples sprinkled with shortbread crumbs. A core of blanched almonds with a dusting of ginger lingers on the finish. It's halibut season in BC, this wine makes a delightful pairing.
For the first time in eight vintages, Figaro is dominated by Roussanne. The Roussanne portion of the blend is entirely puncheon fermented and hails from Sev’s vineyard on Tuc-el-nuit Road. The remaining 20% Viognier portion was sourced from Black Sage Road and is partially fermented in neutral oak barrels.
